Ingredients :

  • 1 ½ kg grated tomatoes
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1 pinch of dried basil
  • 1 pinch of dried thyme
  • 1 pinch dried oregano
  • salt and freshly ground pepper
  • 500 gr pasta
  • 200 gr Hotos anthotyro
  • chopped basil leaves

Boil all sauce ingredients (tomatoes, olive oil, garlic and herbs) for 10 minutes. Then add the pasta, lower the heat, and simmer the mixture for 8 minutes. Then add salt, pepper and the anthotyro that you have by then melted into a creamy sauce. Finally, mix all ingredients well, sprinkle with fresh basil leaves, and serve.
